So imagine my joy on clapping eyes on what is easily the best cocktail menu I've seen in a long, long time. And in Dublin, to boot. Award winning gastropub The Exchequerhas launched a brand new cocktail menu devised by bar manager Rob Caldwell. A talented mixologist, Rob has created a 'Ledger of Liquor' for the bar containing no less than 32 delectable concoctions that include the stunningly good Key Lime Pie Meringue Martini (€9).
With just the right balance of citrus and sweet, this biscuit-rimmed creation is topped with a floating island of flambĂ©ed meringue foam. And yes, it tastes every bit as good as it sounds. Another personal favourite, Chilli Berries (above, also €9), combines vodka, chilli, strawberries and mint for a gorgeously fresh and fruity long drink with a chilli kick. It's topped off with ginger ale for added warmth.
Rob's take on the bellini is easily one of the prettiest drinks around. Instead of fruit puree, which can overpower the prosecco, he's created a 'fruit caviar' - pearls of unique flavours that rise to the top of the glass and burst in the mouth. It comes in three flavours - I recommend the Elder-lini with St Germain Elderflower, Pear & Lychee Caviar (€11).
